Rosemary And Sea Salt Focaccia - cooking recipe

3 cups flour
1/2 tsp salt
1 pkg (1/4 oz) active dry yeast
1/4 cup olive oil
3 stems rosemary, leaves stripped
2 tsp sea salt

Sift flour and salt into a large bowl. Stir in yeast. Add 2 tbsp of the oil and 1 cup lukewarm water. Mix to a firm dough, adding more water if necessary.
Knead dough on a lightly floured surface for 10 mins, or until smooth and elastic. Place in a lightly greased bowl. Cover and let stand in a warm place for 1 hour, or until doubled in size.
Preheat the oven to 425\u00b0F. Lightly grease 2 baking pans and line with parchment paper. Punch down the dough and knead for 1-2 mins.
Divide dough into 4. Roll each piece into an oval about 3/4-inch thick. Place on prepared pans. Brush with remaining 2 tbsp oil, then sprinkle with rosemary and sea salt. Using fingertips, make indentations all over the dough. Cover and let stand for 20 mins.
Bake for 15-20 mins, until golden.
