Corn Relish - cooking recipe

Ingredients
    1 tbsp vegetable oil
    3 None red and yellow peppers, seeded, chopped
    1 None onion, chopped
    1/2 cup apple cider vinegar
    1/4 cup sugar
    2 tsp turmeric
    2 tsp mustard powder
    1 tsp salt
    4 None corn cobs, kernels removed (makes about 3 cups kernels)
    2 tsp cornstarch
    None None multigrain bread, cheese, sliced ham, to serve
Preparation
    In a large, heavy-based saucepan, heat oil on medium. Saute peppers and onion 8-10 mins, until tender.
    Add vinegar, sugar, turmeric, mustard powder and salt. Stir over a low heat until sugar dissolves. Increase heat to high and boil 10 mins. Add corn kernels and boil for another 5 mins.
    Remove 1/4 cup of hot liquid from pan. Add to cornstarch in a small bowl, stirring until smooth. Gradually stir mixture back into pan. Bring to a boil, stirring, until mixture thickens. Simmer 3 mins.
    Spoon mixture into hot sterilized jars and seal. Serve on bread with cheese and ham.
