Mini Pork Pies - cooking recipe

Ingredients
    1 lb pork sausages, casings removed
    2 slices bacon, finely chopped
    1 None green apple, peeled, grated
    1 tbsp fresh sage, finely chopped
    2 tsp fresh thyme leaves, finely chopped
    1/4 tsp white pepper
    1/4 tsp ground nutmeg
    5 sheets frozen pie dough, thawed
    1 None egg, lightly beaten
Preparation
    Preheat oven to 350\u00b0F. Combine sausage, bacon, apple, sage, thyme, white pepper and nutmeg. Mix well to combine. Set aside.
    Cut 24 - 2 1/4 inch discs and 24 - 2 inch discs from pie dough. Line 2 12-cup mini-muffin pans with 2 1/4 inch discs. Distribute 1 tbsp sausage mixture between mini pies. Brush smaller discs with egg then place, egg-side down, over filling. Press edges to seal. Brush tops with egg and cut a slit in the top of each lid.
    Bake for 30 mins, until golden brown. Let cool in pans for 5 mins then transfer to a wire rack to cool.
