Pasta Salad With Fava Beans, Apricots And Bacon - cooking recipe

250 g penne pasta
2-3 tbsp oil
100 g streaky bacon, finely diced
1 medium onion, finely diced
1 tbsp curry powder
250 ml vegetable stock
5 tbsp white balsamic vinegar
200 g dried apricots, quartered
500 g broad beans
1 bunch chives, finely chopped + some for garnish
150 g creme fraiche
Preparation

Cook pasta according to package instructions then drain and set aside to cool.
Heat oil in a frying pan and fry bacon until crispy. Add onion and curry powder and cook for 2-3 mins then deglaze pan with stock and vinegar. Toss with pasta and apricots then allow to cool for about 1 hour.
Cook beans in boiling salted water for 8-10 mins. Drain, rinse under cold water and remove skin. Add to pasta along with chives and creme fraiche (or sour cream, if using). Season and serve sprinkled with chopped chives.
