Strawberry Shortcakes - cooking recipe

Ingredients
    1 cup flour
    1/3 cup powdered sugar, plus additional, to dust
    7 tbsp cold butter, chopped
    1/4 tsp vanilla extract
    8 oz strawberries, hulled and halved
    2 tbsp strawberry jam
    1 1/4 cups heavy cream, whipped
Preparation
    Preheat the oven to 375\u00b0F. Sift the flour and powdered sugar into a bowl. Add butter and vanilla. Rub in with fingertips until mixture forms a dough. Knead until smooth. Wrap in plastic wrap. Refrigerate for 10 mins.
    Roll dough on a lightly floured surface to 1/4 inch-thickness. Cut out 12 rounds with a 3-inch cookie cutter. Transfer to a baking sheet.
    Bake for 10-12 mins until pale golden. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
    Mix strawberries and jam. Use to sandwich the biscuits with whipped cream. Dust with powdered sugar.
