Thyme-Grilled Potato Wedges - cooking recipe
Ingredients

1 lb each russet/yellow potatoes and sweet potatoes, cut into 1 inch wedges
4 tbsp garlic flavored olive oil
1 tsp fresh thyme leaves
Preparation

Place potatoes in a large sauce pot, add enough salted cold water to cover by 2 inches. Bring to a boil, reduce heat and simmer for 5 minutes or until just tender. Drain and cool, pat dry. Toss potatoes with oil and thyme. Grill over medium high heat for 3-4 minutes, turning as grill marks appear, season to taste with salt and pepper, if desired. Serve immediately.
