Curried Sausage And Vegetable Casserole - cooking recipe

Ingredients
    12 links chipolata sausage
    2 stalks celery, trimmed, sliced
    1 None onion, thinly sliced
    1 clove garlic, minced
    2 tsp curry powder
    1/2 tsp chili powder
    1 (13.5 oz) can diced tomatoes
    1/2 cup white wine
    1 None zucchini, halved lengthwise, sliced
    1 None finger eggplant, sliced
    2 tbsp chopped fresh parsley leaves
Preparation
    Preheat oven to 350\u00b0F.
    Heat a large frying pan over high heat. Cook sausages for 4-5 mins, turning, until golden all over. Transfer to an 8x12 inch shallow baking dish.
    Add celery, onion and garlic to pan and saute for 2-3 mins. Add curry powder and chili powder. Cook, stirring, for 1 min, or until fragrant. Stir in tomatoes, wine and 1/2 cup water. Bring to a boil then add zucchini and eggplant. Season to taste. Pour over sausages. Transfer to oven and bake for 10-15 mins, or until vegetables are tender and sausages are cooked through.
    Sprinkle with parsley to serve.
