Grilled Chicken, Chorizo And Mozzarella Kebabs - cooking recipe

Ingredients
    8 None wooden skewers
    1 lb boneless skinless chicken thighs, cubed
    1 None lemon, juiced
    1 tbsp olive oil
    2 cloves garlic, crushed
    1 tsp sweet paprika
    4 oz chorizo sausage, sliced
    7 oz mozzarella cheese, diced
    None None Oil, for brushing
    None None Lemon wedges and parsley leaves, to serve
Preparation
    Soak skewers in water for 30 mins to prevent burning. Combine chicken, lemon juice, oil, garlic and paprika in a large bowl. Cover and refrigerate for 30 mins.
    Preheat the grill on medium-high. Thread chicken, chorizo and mozzarella alternately onto skewers. Brush with oil.
    Grill skewers for 10-12 mins, turning on all sides, until chicken is cooked through. Serve with lemon wedges and parsley leaves.
