Cheesy Bacon And Mushroom Rice Pots - cooking recipe

Ingredients
    1 tbsp vegetable oil
    4 slices bacon, coarsely chopped
    7 oz button mushrooms, thinly sliced
    2 pkg (8 oz each) microwave brown rice
    1 cup frozen peas
    2 tbsp chopped chives
    1 cup grated Cheddar cheese
    None None Mixed salad leaves, to serve
Preparation
    Heat oil in a large skillet on medium-high heat. Add bacon; cook and stir for 5 mins or until browned. Add mushrooms; cook and stir for 3 mins or until soft. Add rice, peas and 1/4 cup boiling water; cook and stir for 2 mins or until rice is tender and peas are heated. Stir in chives and 1/4 cup of the cheese. Season.
    Preheat the broiler to high. Divide rice mixture among four 1 1/2-cup ramekins. Sprinkle with remaining cheese. Broil for 4-5 mins or until cheese is golden. Serve with salad.
