Ingredients

3 None large egg whites
None pinch salt
3/4 cup sugar
1 tsp cornstarch
1 tsp white vinegar
1/4 cup cocoa powder, sifted
15 oz can pitted cherries in syrup
6 None scoops low-fat vanilla ice cream

Preheat oven to 275\u00b0F. Line 2 baking sheets with parchment paper. For the meringues, beat the egg whites and salt with an electric mixer until soft peaks form. Add the sugar, 1 tbsp at a time, beating until thick and glossy. Whisk in the cornstarch, vinegar and cocoa powder. Spoon 12 ovals of the mixture onto prepared baking sheets and bake 45 mins, until crisp on the outside, but still soft inside. Cool completely in the oven with the door ajar and the heat switched off.
Meanwhile, for the cherry sauce, drain the cherries, pouring the syrup into a saucepan. Bring the syrup to a boil and simmer 2-3 mins, until reduced slightly. Cool.
To serve, arrange 6 meringues on serving plates, scoop some ice cream onto each and top with a few cherries, a drizzle of cherry sauce and the remaining meringues.
