Pork Medallions With Zucchini And Corn - cooking recipe

Ingredients
    2 tbsp butter
    1 lb zucchinis, chopped
    1 7 oz can corn, drained
    3 tbsp vegetable oil
    2 None red onions, peeled and cut into wedges
    2 None red skinned apples, halved, cored and cut into wedges
    4 None large pork medallions
    3 oz Gorgonzola cheese, sliced
    None None fresh marjoram leaves, to garnish
Preparation
    Heat the butter in a large heavy-based frying pan or skillet and add the chopped zucchini. Fry over a medium heat for 2-3 mins then add the sweetcorn and fry for another 2-3 mins until the zucchini is golden brown. Season with salt and freshly ground black pepper. Remove with a slotted spoon to a warmed bowl, cover and keep warm.
    Add 1 tbsp of oil to the pan and saute the onion wedges and apples slices until just tender and golden, turning occasionally. Remove and set aside. Add the rest of the oil to the pan. Season the pork medallions then sear in the hot oil for 4-5 mins on each side or until just cooked through.
    Return the apples and onions to the pan and top each medallion with a slice of Gorgonzola. Place the pan under a preheated broiler for 1 min until the cheese just melts. Serve garnished with marjoram and with the zucchinis and sweetcorn.
