Fig And Quince Paste - cooking recipe

Ingredients
    2 1/4 lbs quinces, peeled and cored
    1 cup dried figs, chopped
    1 None cinnamon stick
    None None Sugar
    1/4 cup lemon juice
Preparation
    Combine quinces, figs and cinnamon in large saucepan with enough water to cover. Bring to a boil. Reduce heat to low; simmer, covered, for 1 hour, or until most of the liquid is absorbed.
    Discard cinnamon stick and process mixture until pulpy. Weigh mixture and return to same pan. Add an equal weight of sugar to pulp.
    Stir in lemon juice. Cook, stirring, until sugar has dissolved. Simmer on very low heat for 2 hours, or until mixture leaves side of pan.
    Grease a deep, 8-inch round cake pan. Pour quince mixture into pan. Let stand at room temperature overnight, or until set.
