Sausage Cannelloni - cooking recipe

Ingredients
    3-4 tbsp olive oil
    2 medium onions, finely diced
    2-3 cloves garlic, finely chopped
    1 1/2 tsp curry powder
    1/2 tsp sugar
    1 1/2 tbsp tomato paste
    850 ml tinned chopped tomatoes
    400 ml vegetable stock
    8 None good quality pork sausages
    2 None red chillies, finely chopped
    1 1/2 tsp Italian herbs
    50 g cheese, grated
Preparation
    Heat oil in a saucepan and saute onions and garlic. Add curry powder and sugar and cook for 2- 3 mins then add tomato paste. Add tomatoes and stock, season, bring to a boil then simmer for 12-15 mins, stirring occasionally.
    Meanwhile, mix sausage meat with chilies and herbs then transfer to a piping bag. Stuff cannelloni tubes and arrange in a baking dish. Cover with sauce then top with grated cheese and bake for about 40 mins until golden brown.
