Potato And Pumpkin Soup - cooking recipe

Ingredients
    1 None onion, peeled and finely sliced
    700 g potatoes, peeled and diced
    250 g carrots, peeled and diced
    500 g pumpkin, peeled, deseeded and diced
    1 tsp butter
    1 litre vegetable stock
    2 None bay leaves
    1 bunch chives, finely chopped
    1 sprig dill, finely chopped
    100 ml whole milk
    1 tsp cornflour
    None None Finely chopped herbs, to garnish
Preparation
    Melt butter in a large saucepan on medium heat. Saute onion and carrots until soft. Add potatoes, pumpkin and stock. Season and add bay leaves. Bring to a boil. Reduce heat to low; cover and simmer 20-25 mins.
    Add chives and dill to the soup. Mix milk and cornstarch until smooth and stir into the soup. Return to a boil and season again. Serve sprinkled with chopped herbs.
