Cold Roast Beef With Pan Fried Potatoes And Roasted Red Peppers - cooking recipe

Ingredients
    1 kg potatoes, peeled
    3 tbsp butter
    1 None red onion, peeled and finely diced
    150 g roasted red peppers (from a jar), drained and diced
    30 g pitted black olives, chopped
    2 None spring onions, thinly sliced
    3 sprigs fresh flat-leaf parsley, finely chopped
    1 tsp white balsamic vinegar
    12 slices roast beef
Preparation
    Cook the potatoes in boiling salted water for 20 mins. Drain, allow to cool and cut into slices.
    Melt the butter in a large frying pan and cook the potatoes for 10 mins, turning frequently, until browned and crispy, adding the onion after 8 mins. Season with salt and black pepper.
    In a bowl, mix the peppers, olives, green onions and parsley. Stir in the vinegar and season with salt, black pepper and a pinch of sugar.
    Arrange the beef and potatoes on serving plates and top with the pepper mixture.
