Zucchini, Salami And Pepper Omelettes - cooking recipe

Ingredients
    12 None medium eggs
    3/4 cup milk
    4 tbsp olive oil
    1 None red pepper, deseeded, diced
    1 (7 oz) link salami, finely diced
    1 None zucchini, trimmed, thinly sliced
    3 oz grated Parmesan cheese
Preparation
    Whisk eggs and milk together. Season. Heat 1 tbsp oil in a small nonstick frying pan over medium-low heat. Add 1/4 of the egg mixture and cook gently for 2-3 mins, drawing raw egg towards the center of the pan with a fork. Top with some of the chopped pepper, diced salami and zucchini slices and sprinkle with 1/4 of the Parmesan cheese. Cook for another 2-3 mins, until eggs are just set. Remove from pan and cover to keep warm while you cook remaining 3 omelettes.
    Serve immediately.
