Cherry Coconut And Orange Cake - cooking recipe

Ingredients
    1/2 cup butter
    2 tsp finely grated orange zest
    3/4 cup granulated sugar
    2 None large eggs, separated
    1/2 cup dessicated coconut
    4 oz sliced glace cherries
    2 1/4 cups self-rising flour
    2/3 cup orange juice
Preparation
    Preheat oven to 350\u00b0F. Grease an 8x5 inch loaf pan and line base and sides with parchment paper. Grease paper.
    In a stand mixer, cream butter, orange zest and sugar until light and fluffy. Beat in egg yolks until combined. Stir in coconut and cherries. Fold in flour and orange juice, alternately, starting and ending with flour. Whip egg whites to soft peaks then fold in. Transfer to prepared pan and bake for 1 hour, until a skewer inserted in the center comes out clean. Let cool for 5 mins then transfer to a wire rack to cool completely.
