Pork Tenderloin With Spicy Mango Salsa - cooking recipe

Ingredients
    1 tbsp vegetable oil
    1 1/2 lb pork tenderloin
    None None Spicy Mango Salsa
    2 None small mangoes, diced
    1 None avocado, diced
    1 None small cucumber, diced
    2 tbsp lime juice
    3 None spring onions, finely sliced
    1 None red chili, finely chopped
    None None mixed greens, to serve
Preparation
    Heat oil in a large frying pan over medium heat. Season pork then cook for 10-15 mins, turning, until browned and cooked to your liking. Let rest, covered, for 5 mins.
    Meanwhile, to make the spicy mango salsa, combine all ingredients. Season.
    Slice pork thinly. Serve with salsa and mixed greens.
