Layered Potato And Caramelized Onion Casserole - cooking recipe

Ingredients
    2 lbs potatoes, peeled and thinly sliced
    2 tbsp olive oil
    3 tbsp butter
    3 medium onions, sliced
    2 tsp coriander seeds, lightly crushed
    1/4 cup chopped parsley
    2 cups grated Cheddar cheese
    4 oz wafer-thin slices honey ham
    2 1/2 cups heavy cream
Preparation
    Place potato slices in a large bowl of cold water to remove the excess starch. Let stand for 30 mins.
    To caramelize onions, heat oil and butter in a heavy-bottomed skillet on medium-low heat. Cook onions for 20-25 mins, stirring occasionally, until golden, soft and caramelized. (Keep the heat low, allowing the onions to cook in their juices and create a sweet flavor.) Stir in coriander seeds and parsley.
    Preheat the oven to 350\u00b0F. Drain potatoes. Grease a 2-quart baking dish. Layer with 1/3 of the potatoes, 1/3 of the onion mixture, 1/3 of the cheese and 1/2 of the ham. Repeat the layering twice, ending with a layer of potatoes then onions and then cheese on top. Pour cream over the top.
    Bake 35-40 mins until potatoes are tender and top is golden.
