Cinnamon Apple Granola With Poached Rhubarb - cooking recipe

Ingredients
    3/4 cup honey
    3/4 cup vegetable oil
    1 lb rolled oats
    7 oz rye flakes
    7 oz almonds
    2/3 cup sesame seeds
    1 cup coconut flakes
    2 1/3 cups dried apple, chopped
    2 tsp ground cinnamon
    None None yogurt, to serve
    None None Poached Rhubarb
    12.5 oz rhubarb stalks, cut into 2 inch pieces
    3 tbsp brown sugar
    2 None cinnamon sticks
Preparation
    Preheat oven to 325\u00b0F.
    Heat honey and oil until melted. Combine with oats, rye flakes, almonds and sesame seeds. Transfer to a large baking tray and bake for 15 mins then stir mixture. Repeat twice more. Add coconut and bake for a final 15 mins, or until golden brown. Let cool then mix in dried apple and cinnamon.
    Meanwhile, to make the poached rhubarb, combine rhubarb, sugar, cinnamon sticks and 1 tbsp water in a saucepan. Cover and gently stew for 5-10 mins, or until rhubarb has softened but still holds its shape.
    Serve granola with poached rhubarb and yogurt.
