Spanish-Style Grilled Seafood With Garlic Mayo - cooking recipe

Ingredients
    3/4 cup mayonnaise
    3 cloves garlic, crushed
    1 tbsp lemon juice
    1 lb large shrimp, peeled and deveined, leaving tails on
    1/2 cup extra virgin olive oil
    1 tsp paprika
    2 tsp finely grated lemon peel
    1 1/2 lbs fish fillets, such as whiting, snapper or tilapia
    2 large zucchini, sliced lengthwise
    1 large red pepper, quartered and seeded
Preparation
    For the mayonnaise, mix mayonnaise, 1/3 of the crushed garlic and lemon juice in a small bowl. Refrigerate until ready to serve.
    Mix 1/4 cup of the oil, 1/3 of the crushed garlic, paprika, lemon peel, salt and pepper in a large bowl. Add seafood and fish; toss gently to coat
    Preheat the grill to medium heat. Mix remaining 1/4 cup oil and remaining crushed garlic in a small bowl. Brush on zucchini and red pepper. Grill vegetables, turning, until browned and tender.
    Grill the shrimp and fish until browned both sides and just cooked through. Serve with vegetables, mayonnaise and lemon wedges, if desired.
