Baked Fish Stew With Tater Tots - cooking recipe

Ingredients
    1 tbsp vegetable oil
    1 1/2 tbsp butter
    1 None medium Spanish onion, finely chopped
    2 tbsp all-purpose flour
    1 None vegetable bouillon cube, crumbled
    1/4 cup hot milk
    1 lb fish fillets, cut into 1 inch pieces
    10.5 oz mixed frozen vegetables, thawed
    1 lb frozen tater tots
    None None mixed greens, to serve
Preparation
    Preheat oven to 400\u00b0F.
    In a large saucepan, heat oil and butter over medium heat. Add onion and cook for 3 mins, until soft. Add flour and crumbled bouillon cube. Cook for 1 min, or until mixture thickens. Gradually whisk in hot milk. Bring to a boil, reduce heat and simmer, uncovered, for 3-4 mins, or until sauce thickens. Add fish and vegetables.
    Transfer mixture to a large baking dish. Top with frozen tater tots. Bake for 20 mins, or until golden brown. Serve with mixed greens.
