Goat Cheese And Potato Fritters - cooking recipe

Ingredients
    1 1/4 lb potatoes, peeled, chopped
    1/4 cup heavy cream
    1/4 tsp ground nutmeg
    3 None large eggs, lightly beaten
    2 None large egg yolks, lightly beaten
    1/2 cup all-purpose flour
    9 oz goat cheese, crumbled
    2 tbsp fresh flat-leaf parsley leaves, roughly chopped
    1 pinch cayenne pepper
    None None vegetable oil, for deep-frying
Preparation
    Boil, steam or microwave potatoes until tender then drain. Mash with cream and nutmeg until smooth. Add eggs and egg yolks and beat with a wooden spoon until smooth. Stir in flour, cheese, parsley and cayenne.
    Heat oil in a large saucepan over medium-high heat. Deep-fry level tablespoons of mixture, in batches, until light golden brown. Drain on paper towels.
