Chicken Meat Loaf With Beans - cooking recipe

1 2/3 lbs ground chicken
1 1/2 cups fresh breadcrumbs
2 None eggs, lightly beaten
2 slices bacon, chopped
1 None onion, finely chopped
2 tbsp chopped parsley
2 cloves garlic, crushed
1 tsp Dijon mustard
7 oz green beans, trimmed, blanched and well drained
1 tbsp olive oil
3/4 cup white wine
2 tbsp butter
None None Mashed potatoes, to serve
Preparation

Preheat the oven to 350\u00b0F. Combine ground chicken, breadcrumbs, eggs, bacon, onion, parsley, garlic and mustard in a large bowl, mixing well. Season to taste.
Using wet hands, shape mixture on a sheet of parchment paper into an 11 x 7 inch rectangle, 1/2 inch thick.
Arrange beans down center of half of the rectangle. Fold other half of the rectangle over beans to form a large log. Pat ends together to seal.
Heat oil in a baking pan in oven for 10 mins. Carefully place chicken meat loaf on pan. Bake for 25-30 mins. Remove from oven. Turn meat loaf over with a spatula. Pour wine over the top. Bake for another 15 mins, basting until golden brown and cooked through.
Transfer meat loaf to a plate. Pour remaining 1/2 cup wine into baking pan and stir on high heat, scraping cooked pieces from bottom of pan, for 3 mins, until reduced by half. Add butter and stir on high heat for 1 min.
Serve slices of chicken meat loaf with sauce and mashed potatoes.
