White Chocolate And Cherry Cheesecake - cooking recipe

Ingredients
    1 3/4 cups shortbread cookies, crushed
    1/2 cup hazelnuts, chopped
    5 1/2 tbsp butter, melted
    1/2 cup heavy cream
    6 oz white chocolate, broken into pieces
    3/4 lb cream cheese
    1 tbsp cornstarch
    1 None egg yolk
    3 tbsp granulated sugar
    2/3 lb cherries, pitted
    2 tbsp kirsch
Preparation
    Preheat oven to 250\u00b0F. Mix cookie crumbs, hazelnuts and melted butter and press into 8 x 7 oz ramekins. Chill.
    Meanwhile, heat cream then remove from heat, add chocolate and stir until melted. Beat cream cheese, cornstarch, egg yolk and 2 tbsp sugar then fold in chocolate cream. Distribute between ramekins. Bake for 25-30 mins, until set. Allow to cool.
    For the cherry topping, place cherries, liqueur and 1 tbsp sugar in a saucepan, cover and simmer for 2 mins, then remove lid and simmer for 1 min. Allow to cool then spread over cheesecakes. Serve.
