Tomato And Bean Salad With Lemon Dressing - cooking recipe

Ingredients
    8 oz green beans, cut into 2 inch lengths
    1 lb frozen fava beans
    1 head romaine lettuce, leaves separated
    8 oz watercress
    8 oz cherry tomatoes, halved
    1 None green onion, finely chopped
    2 tbsp parsley leaves, snipped
    None None Lemon dressing
    2 tbsp lemon juice
    1/3 cup extra-virgin olive oil
Preparation
    Bring a pan of salted water to a boil. Add the green beans and cook for 2 mins. Drain, rinse under cold water, then drain again. Repeat with the fava beans and peel away the white the skins, discarding the skins. Place all the beans in a large serving bowl.
    To make the lemon dressing, place the lemon juice in a bowl and gradually whisk in oil. Season to taste.
    Add the remaining ingredients to the beans and pour over the lemon dressing. Toss gently to combine and serve.
