Tomato Consommé With Cheesy Tortilla Rolls - cooking recipe

Ingredients
    2 tbsp olive oil
    2 None onions, diced
    1/2 tsp tomato paste
    1 1/2 lb ripe tomatoes, 1 diced and deseeded, remainder diced with seeds
    4-5 sprigs fresh basil
    1 pinch sugar
    1 None flour tortilla
    2 oz Gouda cheese, grated
Preparation
    Heat 1 tbsp oil in a saucepan, add onions and saute for 1-2 mins. Add tomato paste. Add diced tomatoes with seeds, 2 sprigs basil and 3 1/4 cups water. Season. Simmer over low heat for 25-30 mins. Strain soup into a clean pan and discard solids. Add remaining diced tomato with seeds removed and bring to a boil. Add sugar and season to taste.
    Warm tortilla in the microwave for 5-10 seconds until just soft. Sprinkle cheese over tortilla then roll up and slice into rolls. Heat 1 tsp oil in a non-stick frying pan, add tortilla rolls and saute for 2-3 mins, turning. Distribute between 4 bowls and add tortilla rolls. Garnish with basil then serve.
