Asparagus Frittata - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None leek, halved, washed and sliced
    3 None scallions, thinly sliced
    2 bunches asparagus, trimmed, cut into 3 pieces
    8 None large eggs, beaten
    1 cup milk
    1/4 cup all-purpose flour
Preparation
    Preheat the oven to 350\u00b0F. Line a 9 x 12 shallow baking dish with parchment paper. Heat the oil in a large frying pan over medium heat. Add the leek, scallion and asparagus and cook for 4 mins, until the asparagus softens.
    Arrange the vegetable mixture in the prepared dish. In a bowl, beat the eggs with the milk and flour, season and pour over the vegetable mixture. Bake for 25 mins, until the eggs are set and the frittata is golden. Cut into small squares and serve at room temperature.
