Southern Fried Chicken - cooking recipe

8 cups vegetable oil, for frying
2 tsp salt
2 tsp pepper
2 tsp garlic powder
3/4 cup egg substitute, like Egg Beaters
1/2 cup hot red pepper sauce
1 cup self-rising flour
1 (2 1/2 lb) chicken, cut into 8 pieces, skin removed
Preparation

Preheat oven to 200\u00b0F. Heat oil to 350\u00b0F in a large pot. Combine salt, pepper and garlic powder. Set aside. Whisk together egg substitute and hot sauce. Set aside. Place flour in a shallow dish.
Season chicken with seasoning mix. Dip each piece of chicken into egg mixture then coat with flour. Fry chicken in batches until brown and crisp, around 13-14 mins for dark meat and 8-10 mins for white meat. Transfer cooked chicken to a platter and keep warm in oven.
