Sweet Potato And Tomato Stew - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None small onion, peeled and finely chopped
    1 tbsp tomato puree
    4 cups vegetable stock
    2 None medium sweet potatoes, peeled and cubed
    1 None large yellow pepper, deseeded and roughly chopped
    1 None medium zucchini, cubed
    1 None bay leaf
    1 sprig fresh rosemary, plus more small sprigs to serve
    1 lb beefsteak tomatoes, cubed
    1 None small red chili pepper, deseeded and finely chopped
Preparation
    Heat the oil in a saucepan and cook the onion until golden. Add the tomato puree and cook 30 seconds. Pour in the stock and bring to a boil. Add the sweet potatoes, pepper, zucchini, bay leaf and rosemary and simmer 15 mins. Add the tomatoes and chili pepper and simmer 5 mins. Serve in bowls with the extra rosemary sprigs.
