Roast Beef With Peppercorns And Roasted Garlic - cooking recipe

4 lbs boned and rolled rib joint of beef
1 tbsp table salt
1 tsp salt flakes
2 tsp ground mustard
2 None red onions, peeled, cut into wedges
8 bulbs garlic
2 tbsp green peppercorns
2 tbsp chopped flat leaf parsley
Preparation

Preheat the oven to 350\u00b0F. Weigh the meat to calculate the cooking time. Cook for: 20 mins per lb for rare; 25 mins per lb for medium; 30 mins per lb for well done.
Place beef in a roasting pan Rub the salts and ground mustard onto the meat until evenly covered. Roast for calculated time, basting occasionally with pan juices. For final 45 mins of cooking, add onion wedges, garlic bulbs and 1/2 the green peppercorns; toss with pan juices. Sprinkle remaining green peppercorns over beef.
Remove from the oven; cover with foil. Let stand for 10 mins. Transfer to serving platter. Toss the parsley with the onion, garlic and peppercorns in the pan. Arrange around the beef to serve. Use remaining pan juices to make gravy.
