Oatmeal, Rum Raisin And Tahini Balls - cooking recipe

Ingredients
    1 cup raisins
    1/4 cup rum
    1/3 cup water
    3 cups rolled oats
    1/4 cup brown sugar
    1/4 cup tahini
    2 tbsp honey, warmed
    1 tsp ground cinnamon
    1/4 cup pine nuts, toasted, finely chopped
    1/2 cup blanched almonds, toasted finely chopped
    3 tbsp butter, melted
    1 cup shredded coconut, lightly toasted
Preparation
    Place raisins, rum and water in a saucepan over high heat. Bring to a boil. Reduce heat to moderate. Simmer for 5 minutes or until raisins are plump. Cool slightly. Drain raisins, reserving 2 tablespoons of the cooking liquid. Chop raisins finely.
    Combine raisins, reserved cooking liquid, oats, sugar, tahini, honey, cinnamon, pine nuts, almonds and butter in a bowl.
    Place coconut on a plate. Using damp hands, roll tablespoons of oat mixture into balls. Roll balls in coconut to coat lightly. Place on a baking sheet lined with parchment paper. Chill for 15 minutes or until firm. Serve.
