Sweet Chili Chicken Summer Rolls - cooking recipe
Ingredients

1/2 cup sweet chili sauce
2 tbsp soy sauce
2 tbsp lemon or lime juice
4.5 oz rice vermicelli noodles, cooked, drained, cut into 2 inch pieces
2 oz rotisserie chicken, shredded
16 sheets rice paper
1 None large carrot, cut into matchsticks
1 None small red pepper, cut into thin strips
3.5 oz bean sprouts
1/4 cup small mint leaves, torn
1/2 cup fresh cilantro leaves
Preparation

Combine sweet chili sauce, soy sauce and lemon juice. Toss 2 tbsp with chicken. Reserve remaining to serve.
For each summer roll, dip 1 sheet of rice paper in warm water to soften. Place on a clean tea-towel. Top with noodles, chicken, carrot, pepper, bean sprouts and herbs. Fold in ends then roll up tightly to enclose. Repeat with remaining ingredients to make 16 summer rolls.
Serve with reserved sauce.
