Ingredients

250 g plain flour
1 tsp baking powder
125 g icing sugar, plus 2-3 tbsp
150 g butter, cut into small pieces or flakes
2 medium eggs
50 g breadcrumbs
40 g pine nuts
1 tsp vanilla extract
1/2 None lemon, finely grated zest and juice
400 g apples, peeled, cored and thinly sliced

Mix the flour, baking powder, 2/3 cup sugar and a pinch of salt in a bowl. Cut in 1/2 cup butter then add 1 egg, mix and knead into a smooth dough. Wrap in plastic wrap and chill for 45 mins.
Meanwhile, preheat the oven to 400\u00b0F. Melt the rest of the butter in a pan, add the breadcrumbs and pine nuts and toast. Transfer to a large bowl and set aside to cool. Stir the remaining sugar into the cooled breadcrumb mixture along with the vanilla, lemon zest, 2 tbsp juice and the apples.
Line a baking sheet with parchment paper then roll the pastry out on a lightly floured surface into a 10 x 14 1/2 inch rectangle. Spread the apple mixture over the top, leaving a 2/3 inch border all round. Roll the strudel up and put on the prepared baking sheet. Whisk the remaining egg and brush it over the strudel. Bake for 25-30 mins. Cool on a wire rack then slice and serve with whipped cream.
