Apricot Bars - cooking recipe

Ingredients
    1/2 cup (1 stick) butter, at room temperature, cubed
    2/3 cup brown sugar
    1 tsp vanilla extract
    2 None large eggs
    2 1/3 cup self-rising flour
    1 1/2 tsp ground cinnamon
    3/4 cup sour cream
    2 tbsp milk
    6 None apricots, pit removed, sliced
    None None Confectioners' sugar, for dusting
Preparation
    Preheat oven to 350\u00b0F. Lightly grease a 7 x 11-inch pan. Line base and sides with parchment. In a large bowl, using an electric mixer, cream butter, sugar and vanilla until fluffy. Add eggs one at a time, beating well after each addition.
    Sift flour and 1 tsp cinnamon together, then lightly fold into creamed mixture alternately with combined sour cream and milk, beginning and ending with flour. Spread mixture into prepared pan. Press apricot slices into mixture.
    Bake for 40-45 mins or until cooked when tested with skewer. Cool in pan for 5 mins, before turning onto a wire rack to cool completely. Mix confectioners' sugar with remaining cinnamon, sift over apricots and cut into squares.
