Strawberry-Oatmeal Muffins - cooking recipe

1/2 cup self-raising flour, sifted
30 None coconut-oatmeal cookies, processed to crumbs
3/4 cup granulated sugar
2 tbsp milk
1/2 cup butter, melted, cooled
1 None egg, lightly beaten
3/4 cup strawberry jam, warmed
Preparation

Preheat oven to 350\u00b0F. Line a 12-cup muffin pan with paper liners.
Combine flour, 1/2 of cookie crumbs and sugar. Whisk together milk, butter and egg then mix into dry ingredients until just combined. Distribute 1/2 of mixture between liners. Spoon 1 tsp jam over top of each and swirl together. Cover with remaining mixture and sprinkle with remaining cookie crumbs. Bake for 20-25 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool.
Serve warm.
