Vegetable Tortilla - cooking recipe

Ingredients
    1 tbsp oil
    1 medium onion, diced
    1 clove garlic, finely chopped
    1 None red pepper, diced
    1 medium carrot, peeled and sliced
    150 g mushrooms, sliced
    1-2 None spring onions, finely sliced
    75 g reduced fat feta cheese
    4 medium eggs
    1 bunch mixed herbs, such as parsley and basil
    125 ml semi-skimmed milk
Preparation
    Preheat the oven to 350\u00b0F. Heat oil in a frying pan and saute the onion, garlic, pepper, carrot, mushrooms and spring onions for about 5 mins. Transfer to a greased 8 inch round baking dish. Crumble the feta on top.
    Beat the eggs in a bowl and add the herbs and milk. Season with salt and pepper and pour over the vegetables and cheese. Bake for 20 mins until golden brown.
