Baked Three Cheese Gnocchi Wtih Broccolini - cooking recipe

Ingredients
    1/2 cup whipping cream
    4 oz Parmesan cheese, grated
    3 oz blue cheese, crumbled
    1 None large egg, lightly beaten
    1 clove garlic, crushed
    1 lb gnocchi
    2 tsp olive oil
    8 oz baby Portabella mushrooms, sliced
    1 bunch broccolini, cut into 2 inch pieces, blanched
    4 oz fresh Mozzarella cheese, torn
Preparation
    Preheat oven broiler on high. For the sauce, combine cream, Parmesan, blue cheese, egg and garlic. Season.
    Cook gnocchi in a saucepan of boiling water, according to package directions. Drain.
    Meanwhile, heat oil in a pan on high. Cook mushrooms 2-3 mins, until lightly browned. Add to sauce, along with broccolini and gnocchi, and toss to combine. Transfer to a 10-cup baking dish. Top with Mozzarella and broil 5 mins, until golden and heated through. Serve hot.
