Smoked Chicken, Potato And Feta Salad With Green Sauce - cooking recipe

Ingredients
    None None Green Sauce
    2 cloves garlic, sliced
    1 lb baby spinach
    1/4 cup fresh herbs, chopped
    1 tsp lemon zest
    1/2 cup olive oil
    None None Smoked Chicken, Potato and Feta Salad
    1 lb baby potatoes, halved if large
    1 None smoked chicken breast, shredded or sliced
    1/4 None cucumber, diced
    1/2 None red onion, finely sliced
    3.5 oz baby mesclun
    2 oz feta cheese, crumbled
Preparation
    To make the green sauce, combine garlic, spinach, herbs, lemon zest and 1 tsp salt in a food processor or blender. Pulse until finely chopped. Add 1/4 cup warm water and blend well. With the motor running, gradually add oil in a steady stream until sauce is bright green and smooth. Set aside 4 tbsp for the salad. Reserve remaining for another use.
    To make the smoked chicken, potato and feta salad, cook potatoes in boiling, salted water until just tender. Drain then toss with shredded smoked chicken, cucumber, red onion and baby mesclun. Arrange on a serving platter and spoon green sauce over top. Top with crumbled feta.
