Spicy Shrimp And Crab Soup With Bok Choy - cooking recipe

Ingredients
    1 tbsp oil
    1 bunch spring onions, shredded
    2 None red chili peppers, finely chopped
    1 inch piece ginger, peeled and chopped
    1 stalk lemongrass, chopped
    1 clove garlic, peeled and chopped
    14 oz can chopped tomatoes
    4 tbsp fish sauce
    1 1/2 cups fish stock
    2 None small heads bok choy, leaves separated
    1 handful fresh cilantro leaves
    8 oz fresh crab meat
    8 oz shrimp, thawed if frozen and peeled
    None None lime wedges, to serve
Preparation
    Heat oil in a wok or frying pan. Add spring onion and cook 2-3 mins. Remove from pan and set aside. Add chili pepper, ginger, lemongrass and garlic. Cook 5 mins, stirring. Add tomatoes, fish sauce and stock. Cook 5 mins. Add bok choy, cilantro, crab, shrimp and cooked spring onion. Bring to a boil, reduce heat and simmer 3 mins. Serve with lime wedges.
