Stuffed Tomatoes - cooking recipe

100 g long-grain rice
1 tbsp oil
2 None shallots, peeled and finely diced
500 g beef mince
8 None beef tomatoes, lids cut off, flesh scooped out and diced
1/2 tsp dried oregano
75 g feta, crumbled
125 ml vegetable stock
200 g tzatziki
Preparation

Preheat the oven to 325\u00b0F. Cook the rice in boiling salted water according to the package instructions. Heat the oil in a frying pan and saute the shallots for 2 mins. Add the ground beef and cook for 5 mins, breaking up into small pieces. Add the diced tomato flesh and cook for 2 mins. Stir in the oregano and season with salt and black pepper.
Drain the rice and mix with the feta. Add the rice mixture to the ground beef. Then spoon that mixture into the tomatoes. Place in a roasting pan and pour over the stock. Bake for 10 mins, then place the lids on the tomatoes and bake for a further 10 mins. Serve with tzatziki.
