Roasted Pork Loin With Couscous And Caramelized Carrots - cooking recipe

Ingredients
    1 tsp olive oil
    1/4 lb boneless pork loin roast
    1 oz couscous
    1/3 lb baby carrots, peeled
    1 tsp sugar
    1/2 bunch cilantro, chopped
Preparation
    Heat oil in a pan and sear the meat on all sides over high heat. Reduce the heat, cover and cook for about 6 mins. Meanwhile, mix the couscous with 3 tbsp boiling slated water, cover and set aside for about 10 mins.
    Bring 1/2 cup salted water to a boil and add the carrots. Boil for about 3 mins with the lid on. In a separate pan, caramelize the sugar then add 5 tbsp of the carrot water and stir until the caramel dissolves. Drain the carrots and mix with the caramel and half the cilantro. Serve with the sliced meat and couscous and sprinkle with the remaining cilantro.
