Broiled Garlic Mussels - cooking recipe

Ingredients
    12 None mussels, scrubbed and bearded
    2 tsp olive oil
    1/2 small onion, finely chopped
    2 cloves garlic, crushed
    1/2 small tomato, diced
    2 tbsp fresh breadcrumbs, toasted
    1 tbsp finely chopped parsley
    1 tbsp lemon juice
    1/2 tsp Tabasco sauce
    None None FOR THE TOPPING
    2 tbsp fresh breadcrumbs
    1 tbsp finely chopped parsley
    1 tbsp olive oil
Preparation
    Bring 1/3 cup water to boil in large saucepan on high heat. Add mussels. Cook, covered for 3-5 mins, shaking pan occasionally, until mussels have opened.
    Break apart shells. Remove mussels to a bowl. Arrange 12 half shells on a baking pan.
    Heat oil in medium skillet on high heat. Saute onion and garlic for 1-2 mins, until tender. Remove from heat. Stir in tomato, breadcrumbs, parsley, lemon juice and Tabasco sauce. Season to taste. Add mussels; toss to combine. Divide the mussels and filling into each shell.
    Preheat the broiler on high.
    For the topping, combine breadcrumbs and parsley in small bowl. Sprinkle topping over each mussel. Broil for 2-3 mins, until topping is lightly toasted. Drizzle with a little oil before serving.
