Fish Stew With Cheddar - cooking recipe

Ingredients
    3 tbsp butter
    4 oz onions, trimmed and diced
    2 None zucchini, thinly sliced
    3 None tomatoes, deseeded and diced
    1 tbsp all purpose flour
    1 2/3 cup vegetable stock
    1/2 cup milk
    2 tbsp wholegrain mustard
    7 oz Cheddar, grated
    1 2/3 lb cod fillet, cut into cubes
Preparation
    Melt half of the butter in a saucepan, add the onions and saute for 3-4 mins. Add the zucchini and tomatoes then season and saute, stirring, for 4-5 mins.
    Heat the rest of the butter in a separate saucepan and mix in the flour. Saute for 1-2 mins. Gradually mix in the stock and milk. Simmer, stirring, for 4-5 mins until thickened.
    Mix the mustard and cheese into the white sauce then stir in the fish and vegetables. Simmer for 8-10 mins, stirring occasionally.
