Chorizo Sandwich With Tomato Salad - cooking recipe

Ingredients
    5 oz chorizo sausage, diced
    2 None scallions, sliced
    2 stems basil, chopped
    6 None eggs
    8 oz cherry tomatoes, halved
    1 None lime, juiced
    1/2 tsp sugar
    4 None small baguettes
Preparation
    Put the chorizo in a cold skillet and cook it until crispy over a medium heat. Add the scallions in the last 2 mins. Whisk the eggs in a bowl and add the basil. Pour the egg mixture into the hot chorizo pan, stirring occasionally. Season to taste.
    Mix the tomatoes, lime juice and sugar and season to taste. Halve the baguettes lengthwise. Spread the bottom halves with the scrambled eggs mixture and put the other halves on top. Serve with the salad.
