Lacy Pancakes With Strawberries And Honey - cooking recipe

Ingredients
    1 None medium egg
    1/3 cup all-purpose flour
    1/2 tsp sugar
    2/3 cup milk
    1 tbsp butter
    8 oz strawberries, hulled and sliced
    1/2 tsp ground cinnamon
    2 tbsp honey
    1 1/4 cups heavy cream, whipped
    None None Powdered sugar, to dust
Preparation
    Place the egg, flour and sugar in a large bowl and whisk together. Gradually add the milk, whisking continuously, to form a smooth batter. Set aside for 20 minutes to allow the batter to thicken slightly.
    Heat an 8 inch frying pan over medium heat and lightly butter the base.
    Starting from center of pan, spoon a thin stream of batter to form a spider's web effect. Cook for 1-2 mins. Carefully turn; cook for another min. Repeat with remaining batter, adding more butter to the pan as needed, to produce 6 lacy pancakes.
    In a separate bowl, mix together the strawberries, cinnamon and honey.
    Fill each pancake with spoonfuls of whipped cream and strawberries. Serve immediately, dusted with powdered sugar. If preparing pancakes in advance, store layered with parchment paper; heat and add fillings just before serving.
