Cherry Compote - cooking recipe

Ingredients
    1 (15 oz) can pitted black cherries, drained, juice reserved
    1 cup granulated sugar
    1 None vanilla bean, split
    1 None lemon, zested and juiced
Preparation
    Combine cherry juice, sugar, vanilla bean, 1/2 tsp lemon zest and 1 tbsp lemon juice in a saucepan over low heat, stirring, until sugar dissolves. Add cherries and bring to a boil. Cook, uncovered, for 7 mins, or until mixture thickens and coats the back of a spoon.
    Let cool to room temperature to serve.
