Sea Bream And Pastis Ceviche - cooking recipe

Ingredients
    9 oz skinless sea bream fillet, bones removed, diced
    1 None lime, 1/2 zested, juiced
    1 tbsp olive oil
    1 tbsp Pastis or other anise-flavored liqueur
    1 tsp pickled green peppercorns, roughly chopped
    1/2 cup fresh cilantro, roughly chopped, plus extra sprigs for garnish
    12 leaves red chicory
Preparation
    In a bowl, toss diced fish with 1-2 tbsp lime juice. Cover and chill for 15 mins.
    Add lime zest, olive oil, liqueur, peppercorns and cilantro. Season. Distribute between chicory leaves and garnish with cilantro. Serve immediately.
