Minted Shrimp And Melon Salad - cooking recipe

Ingredients
    1 None small Galia or cantaloupe melon, halved and seeded
    1/2 lb cooked shrimp, peeled and deveined
    2 tbsp finely chopped fresh mint leaves
    2 tbsp diced jarred roasted red peppers
    2 tbsp lemon juice
    1 tbsp olive oil
    1 tsp coarse-grain mustard
Preparation
    Using a melon baller, scoop out melon balls from each melon half. Place the melon balls in a large bowl; add the shrimp, mint, roasted peppers, lemon juice, oil and mustard. Season with salt and pepper to taste and toss well. Spoon the salad into the melon halves and serve.
