Creamy Baked Vegetables - cooking recipe
Ingredients

1 lb potatoes, peeled and cut into wedges
2/3 lb brussels sprouts, peeled and halved
1 lb carrots, trimmed and sliced
1 tbsp butter
1 None onion, diced
2 tsp curry powder
5 tbsp all purpose flour
1/2 cup heavy cream
3 1/2 oz feta
Preparation

Preheat the oven to 425\u00b0F. Cook the potatoes and sprouts in a large pan of boiling, salted water for 5-6 mins then add the carrots and continue to cook for a further 4-5 mins. Drain.
Heat the butter in a saucepan, add the onion and saute for 2-3 mins. Stir in the curry powder and flour and saute for a further 1-2 mins. Gradually stir in the cream and 1 2/3 cup of water. Season and simmer for 4-5 mins, until the sauce thickens. Mix in the vegetables then transfer the mixture to a baking dish.
Crumble feta over the top of the dish then place in the oven to bake for 10-15 mins. Serve.
